Feta Pork Chops is one of my personal recipes. I developed the dish on my own while seeking more options for dinner. How many of you out there are damn tired of the same meals every week? Uh, huh. I hear you. I could still read you the menu from my childhood. Those basic meals are ingrained in my repertoire. However, I don’t wish to spend another forty years eating them on repeat. When you’re a foodie, you need variety.
Growing up, feta and many other staple items were missing from the table. I didn’t even have Chinese take away until I was in my twenties! You might wonder with such a history, how I came to know how to cook at all. My mother taught me. Although she prepared the same meals week after week, it wasn’t due to her inability to chef. Quite the contrary. My dad, you see and God bless him, will only eat a short list of things. Don’t ask me how he doesn’t get bored. He’s not alone either.
My cooking ability comes from the talents of my mother, what she taught me, and a desire to experience more. I hope you’ll enjoy this recipe, and it will extend your options. You deserve not to be bored by your meals.
The following recipe is a savory meal with a Mediterranean flare.
What you will need: baking or roasting pan, feta cheese crumbles, olive oil, carrots, onions, garlic cloves, pork chops (however many you need to feed your guests), parsley, salt, and pepper.
Ingredients:
- Olive Oil
- 2-4 Pork Chops
- 3-6 TBSP Feta Crumbles
- 1/4 Cup Chopped Onion
- 2-3 Large Cloves of Garlic
- 1 Julienne Carrot
- 1 TSP Chopped parsley (dry or fresh)
- Salt and Pepper to Taste
Preheat Oven to 375°.
Grease your baking pan lightly with olive oil. Rinse, dry, and then rub pork chops with olive oil. Sprinkle chops with salt and pepper to taste. Set aside.
Dice onions and garlic, julienne carrot, and chop parsley if using fresh. Be sure to dice onions and garlic thin enough that they will be thoroughly cooked. Toss parsley, onions, and garlic together. Place julienne carrots around the chops. Place onion mixture on chops and carrots.
Sprinkle feta on the pork allowing some to fall on the vegetables.
Bake for approximately 35 minutes. The cheese will brown slightly.
Serve with roasted potatoes and steamed green beans for a fantastic and satisfying meal.
