This recipe has been used for well over a decade by my mother and myself. Mom chanced upon it at a Christmas party before she retired from New York State Civil Service (Over 37 years Union Strong). It’s a great recipe that will liven up the old stale yam dishes for Thanksgiving or Christmas meals. Easy to make and always a hit, you can bring it to work for your office party. It reheats beautiful. Eat it as a side or as a dessert.
Berry Mallow Yam Bake
- ½ cup flour
- ½ cup brown sugar
- ½ cup oats (quick or old fashioned)
- 1-teaspoon cinnamon
- 1/3-cup margarine or butter
- 2 cans (16 oz.) yams, drained
- 2 cups cranberries (fresh) or 1 can whole sauce
- 1 ½ cups mini marshmallows
Preheat oven to 350º.
Mix flour, brown sugar, oats, and cinnamon. Cut in butter until mixture resembles coarse crumbs. Toss 1 cup flour mixture with yams and cranberries. Place in a ½ qt. Casserole dish. Put remaining flour mixture on top.
Bake for 35 minutes. Then sprinkle with marshmallows, and broil until lightly browned.
