This recipe is now a staple in my house. I keep pureed pumpkin on hand to make these awesome cookies for Miss Shagbottom. I’ve also figured out that you can replace 1/2 the pumpkin with apple to mix it up a bit. Thanks to Anita Chu of Dessert First!
