Earlier this week, I gave you my recipe for easy potato salad. Today, I’m going to share my recipe for an easy Macaroni Picnic Salad. This is another staple of the summer table. Everyone has their own take on it, but this is the one that my mother has always made, and the one that I make, and it’s pretty popular with party goers and our family.
What you will need:
Box of spiral noodles (your pick), Mayonnaise (Hellman’s again), can of white albacore (dolphin safe) tuna in water — or those tiny shrimp in a can, celery, onion, green peas (fresh or frozen) salt and pepper.
- 1 Box of Spiral Noodles
- 2 – 3 Cups of Mayonnaise
- 1 Can of White Albacore Tuna (Or shrimp) water pack
- 1 Cup of green peas
- 1/2 Cup finely chopped onion
- 1/2 Cup chopped celery
- Cracked Pepper and salt to taste
Boil all the spiral noodles in the box until tender. Drain and place in a bowl (they should not be wet). Boil your peas as you would for serving them as a side dish. Drain them and then place with noodles.
Drain the tuna (I squeeze it in the can until all the water is out of it. Use a fork to separate the pieces in bits, as if you were making Tuna Salad. Or: drain baby shrimp. Add to the bowl.
Combine celery and onion in the bowl with the mayonnaise. Add Salt and Pepper and mix.
Set aside in the refrigerator to cool. The noodles will soak up that mayonnaise, so you may need an additional 1/2 cup. Serve and enjoy.
